Strawberry Coffee Cake

This delicious strawberry coffee cake has a hidden surprise inside that makes each bite a delightful fruit and nut filled experience.

1 cup butter, softened
1-1/2 cups sugar
3 eggs
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 (8 oz.) cup sour cream
2 teaspoons vanilla extract
2 cups fresh strawberries, chopped

Filling

3/4 cup walnuts, chopped
1/4 cup sugar
1/4 cup packed brown sugar
3/4 teaspoon ground cinnamon

Directions

Preheat oven to 350 degrees

In a mixing bowl, cream butter and sugar together. Add eggs, mix well. In a separate bowl, combine flour, baking powder and baking soda. Add flour mixture to creamed mixture; alternating with the sour cream. Beat in vanilla. Fold in the strawberries. Spoon half of the batter into a greased and floured 10-inch fluted tube pan.

Combine filling ingredients and sprinkle half of filling over batter. Top with remaining batter, then add the remaining filling on top. Bake 50 to 60 minutes, until inserted toothpick comes out clean. Allow to cool for 15 minutes before removing from pan and transferring to a wire cooling rack. Let cool completely before serving.
