You need an easy dessert recipe. The sort of recipe that you can just whip up in an emergency. You know the times – when family just arrives on your doorstep. Why do they always come just at meal times?
What you need is a dessert recipe that looks spectacular. Something of a conversation piece. That is super quick and east to make. And of course it needs to taste delicious.
Well my good friend showed me how to make this dessert recipe on New Year’s Eve. It is a Pavalova Roll which takes 3 minutes to cook.
Now for those who don’t know what a pav is then, this will mean nothing. But for those initiated to the sweet Australian (or New Zealand) dessert, you will be thinking I’ve gone crazy. I mean a Pavalova takes at least 90minutes in a very low heat oven.
Well, this is a new take on an old favorite.
And for those that don’t know what the heck we are talking about. A Pavalova is a round dessert cooked on a tray in the oven. It has a crisp meringue link outer and a sweet soft marshmallow type filling. When it has cooled you cover it in a good layer of whipped cream and then decorate with strawberries, kiwi fruit, passionfruit, or whatever you have on hand.
So this Pavalova Roll recipe results in a sweet roll of marshmallow with cream and fruit. It tastes like the traditional Pavalova but without the crisp shell.
Pavalova Roll Recipe
¼ cup hazelnut meal or crushed nuts or cinnamon sugar
Take your glass turntable out of your microwave. Cut a piece of non-stick baking paper to the size of your microwave turntable and place on your turntable. (if your turntable can’t be removed, then just cut a piece of baking paper the right size). Place the baking paper on the turntable. Sprinkle with the meal or nuts to create an even coverage – this is to stop the pav from sticking.
4 egg 1 teaspoon white vinegar 1 teaspoon vanilla ¾ cup of super fine (castor) sugar
Separate the eggs – you will only need the whites.
Whip the egg whites till light and fluffy. Then put in the sugar, vanilla and vinegar and continue to whip till firm peaks form.
Spoon this onto the baking paper in blobs. Then with the back of your spoon smooth each blob out very gently. Just make it reasonably even, don’t be too concerned.
Now put in the microwave on high for 3 minutes. Once done take out and cool.
When it is cool to the touch, cover with a thick layer of whipped cream and fruit. Use your favorite fruits like cherries or berries.
Now roll it up starting at one edge. Take to the table as a spectacular roll and cut everyone a slice. Serve with extra fruit and cream or even ice-cream.
