You should never take the risk of mentioning mushrooms around me. There seems to be a fine line that I have crossed that has led to me being absolutely obsessed with them. Any dish that contains mushrooms as a focal point is something that I am willing to try. I was recently able to try the dish that I am going to teach you today. The name of the dish is Garlicky Mushroom Pakoras. These are whole mushrooms that are dunked in a spiced garlicky batter and deep-friend until golden colored. They are at the most delicious level when they are served piping hot.
Garlicky Mushroom Pakoras:
Ingredients: -1 cup gram flour -1/2 tsp salt -1/4 tsp baking powder -1 tsp cumin seeds -1/2-1 tsp chili powder -3/4 cup water -2 garlic cloves, crushed -1 small onion, finely chopped -Vegetable oil, for deep-frying -1 lb white mushrooms, trimmed and wiped -Lemon wedges and cilantro sprigs, to garnish
You will start the process to making these delicious mushrooms very simply. Put the grain flour, salt, and baking powder into a large bowl. Grab a wooden spoon and mix the contents together very well. You will then need to add in the cumin and chili pepper. Make sure that you mix them in with the rest of the mixture very well. The next thing to do is make a well in the center of the mixture and gradually stir in the water, mixing thoroughly to form a thick batter. You can now move onto the next step in the cooking process.
This is where you will stir in the garlic and onion into the batter. You should then let the mixture infuse for about 10 minutes. Once the 10 minutes have passed, fill a deep fat-fryer or pan with 1/3 the amount of vegetable oil. You will heat the oil to 350 degrees Fahrenheit or until the cube of bread browns in 30 seconds. Lower the basket into the hot oil and deep fry.
Meanwhile, mix the mushrooms into the batter. You should stir in the coat as well as you can. Remove a mushroom a few at a time and place thing into the oil. The mushroom should saute in the oil for about 2 minutes, or until golden brown. Repeat this process until you have done the same thing for all of the mushrooms that you wish to cook. Remember to only cook a few of them at a time.
Remove the mushrooms from the pan with a slotted spoon and drain on paper towels while you are cooking the remainder in the same way. You should serve the mushrooms hot, as mentioned before. Sprinkle the mushrooms with a coarse salt and garnish them with lemon wedges and cilantro sprigs. There you have it! You have now finished your dish. Enjoy!
