The popular ham and cheese combination makes these muffins a sure-fire winner on your breakfast, lunch or dinner table.
2 cups self-rising flour 1/2 teaspoon baking soda 1 cup milk 1/2 cup mayonnaise 1/2 cup cooked ham, finely chopped 1/2 cup cheddar cheese, shredded
Directions
Preheat oven to 425 degrees.
In a large bowl, combine flour and the baking soda. In a small bowl, combine remaining ingredients. Stir ham mixture into flour mixture just until moistened. Fill greased muffin cups 2/3 full with batter.
Bake 16 to 18 minutes, until inserted toothpick comes out clean.
Note: If you don’t wish to use self-rising flour, you can use this substitute: Combine 1-1/2 teaspoons baking powder, 1/2 teaspoon salt with 1 cup all purpose flour. Make sure you add the flour in last.
