To check if a spread is heart-healthy, look for a cholesterol-free soft tub spread that is made from 50 percent to 60 percent vegetable oils, has 2 grams or less of saturated fat and contains no trans fat per serving.
Dana Jacobi, author of the "12 Best Foods Cookbook," offers these tips for cooking and baking with margarine spreads:
* To measure soft tub spread correctly, make sure to level the cup or spoon.
* When saut?ing, use medium heat to maintain the flavor and to avoid burning the spread.
* For baking, chill the spread in the freezer before measuring it if the recipe calls for creaming it with sugar.
* When melting a spread for baking, remember that it melts quickly. In the microwave, 3 tablespoons of tub spread melts in 15 seconds, versus 30 seconds for butter.
Now that you know which spreads to choose and how to cook with them, try it for yourself. The following recipe uses a heart-healthy spread and produces perfect results.

Turkey Caesar Wrap
Caesar salad was invented in Mexico by an Italian, which explains why both countries try to lay claim to this venerable dish. Wrapping the Italian flavors in a Mexican tortilla acknowledges contributions from each.
1 1/2 ounces turkey deli meat (with more than 1 but no more than 3 grams of fat per ounce), sliced into bite-size pieces
1 cup chopped celery MEN: 2 cups
1/2 cup shredded romaine lettuce MEN: 1 cup
1/2 cup chopped tomatoes or halved cherry tomatoes
1/4 cup thinly sliced red onion MEN: 1/2 cup
1 tablespoon fat-free Caesar dressing
One 2:90 wrap (serving size: 35 grams) or tortilla
Freshly ground black pepper
In a medium bowl, toss the turkey, 1 cup celery, 1/2 cup lettuce, 1/2 cup tomatoes, and 1/4 cup red onions with the Caesar dressing. Microwave the wrap for 10 to 15 seconds to soften it. Mound the dressed salad in a line across the center of the wrap. Sprinkle with black pepper to taste, wrap, and serve.
MEN: Make a side salad with the extra celery, lettuce, cherry tomatoes, red onions, and avocado. Dress the salad with fresh lemon juice and basil if you prefer Italian flavors, or with fresh lime, cilantro and hot sauce if Mexican is more your style.
The reality is that extreme diets that promise instant results just don't work. For one thing, you lose muscle and water, but little fat, and may seriously jeopardize your health in the process.
