A Christmas Borscht Recipe

A borscht recipe for christmas Serves 8.

In our times, Xmas is one of the only times that a family gets to sit down and eat together for a couple of days or more. Traditional Christmas cooking is swell, but pretty soon you just can't stomach another meal based around Turkey.

That is when it is a clever idea to serve up a recipe marginally unorthodox, and this Christmas Borscht Recipe is certainly that!

Ingredient list

32 oz diced canned beetroot 3 cup water 1 celery stalk 1 carrot, quartered 1 bay leaf 1 garlic clove, peeled 1/4 tsp peppercorns, whole 1/4 tsp salt 1 tablespoon lemon juice 1 teaspoon sugar A little sour cream or dill sprigs for use as a garnish


Drain the beetroot, reserving liquid and put beets aside.

In a large pan combine the liquid from the beets, water, celery, carrot, bay leaf, garlic, peppercorns and salt.

Heat until boiling.

Cover and turn down the heat, then simmer for 15 minutes.

Remove vegetables and seasonings with a slotted spoon.

Stir in reserved chopped beetroot, lemon juice and sugar.

Continue cooking for 10 minutes or until heated through.

Serve topped with sour cream (or dill sprigs as a garnish)
