Cajun Receipts

Learn Cajun Cooking from a Louisians native, quick and easy gumbo receipts. Boil crawfish and shrimp the easy way. Making a reaux that everyone will love. Below is a sample receipt for cajun rice:

One of my favorite all time receipts is Cajun Rice dressing.  The receipt follows.

Ingredients:

1 package of Jimmy Dean Hot sausage

1 cup celery

1 cup onions

1 cup green bell pepper

2 Tbls olive oil

2 cups of rice (boiled with 4 cups water)

Cook the ingredients until the sausage is well done and the vegetables are semi-soft

Fold in the cooked rice and serve hot

This dish is a favorite anytime, but around our household it is a necessity for Thanksgiving and Christmas dinner. If you want to spice up your next covered dish get-together this dish will be a winner.

Another simple and easy receipt is red beans and rice.  The seecret to good red beans is making sure you cook them slowly for at least three hours, after soaking them overnight.

Ingredients:

1 package of reb beans (you can substitute brown beans if you so desire)

2 medium onions, chopped

1 cup fresh chopped parsley

salt and pepper to taste (both red and black pepper)

After two hours of cooking, take 1/3 rd of the beans out of the pot and mash them into a mush. Reinsrt the beans into the pot and continue cooking for another hour to an hour and a half.

On a outdoor grill cook 2 pounds of sausage (whichever kind you like best), cutting into 1/2 half inch slices before placing on the grill.  Use  a vegetable grill plate as this will prevent the meat from falling in the fire, cook until brown on both sides. Then about 30 minutes before taking up your beans, add the sausage to the bean pot.

Prepare your rice and serve beans and sausage over the rice.
