Cranberry Cloud Dessert and Great PR For Cranberries!

The following recipe for Cranberry Cloud Dessert will blow your mind. Even people who think they are not big cranberry fans will love the tart sweetness of this dish.

2 Cans Whole Berry Cranberry Sauce
4 Cups Miniature Marshmallows
1/2 Cup Chopped Pecans or Slivered Almonds
2 teaspoons Lemon Juice (Freshly squeezed is better than using the juice from bottles or plastic lemons!)
4 Cups Whipped Topping

Combine all of the ingredients except for the whipped topping. Fold in the whipped topping and place in a large glass bowl. Cover tightly and refrigerate until you're ready to serve the dessert.

Serve with a lovely sprig arrangement of mint and a few whole cranberries.

According to Cranberry, cranberries are more than just delicious. We all know that we should eat more fruits and vegetables. Antioxidants in each will protect us from a multitude of evils. Cranberries, themselves, contain something known as proanthocyanidins (PACs). PACs prevent the adhesion of certain types of bacteria from doing us harm. Bacteria such as ecoli and the bacteria associated with urinary tract infections can particularly be avoided with proanthocyanidins.

Furthermore, cranberries have been shown to fight against gum disease, ulcers, heart disease, and cancer. While cranberries are one of the most healthful fruits, with a high level of disease-fighting antioxidants, they are also one of the most overlooked fruits.

Packed with antioxidants, cranberries should be something we all serve more often. Fortunately, recipes such as the one above, make it pretty easy to get creative with this healthy fruit. Cranberry Juice, canned Cranberry Sauce (whole), and canned Cranberry Sauce (jellied) also give us plenty of opportunities to work cranberries into our meals. Cranberry sauce is an amazing compliment to turkey, chicken, and chicken salad sandwiches all year long, not just during the holidays.

During the summer months, I love to serve Cranberry Sauce alongside grilled chicken breasts, fresh corn on the cob, and a spinach salad. The colors are unbelievable and the taste is even more impressive. Fall in love with cranberries, they'll never give you reason to fall out of love!
