Kansas 1-2-3-4 Cake

This simple recipe has been a Kansas favorite for many, many years. Beginning in the farmhouses in the early nineteen hundreds, it has become a staple of rural life is this beautiful state. First you need to gather all the following ingredients as follows:

1 cup butter
1 teaspoon vanilla extract
1 teaspoon salt
1 cup milk
2 cups sugar
3 cups all purpose flour
4 eggs
4 teaspoons baking powder

Preheat your oven to 350 degrees.

Blend the butter and sugar until the mixture is fluffy. Add eggs one at a time, beating after each. Stir in vanilla. Beat some more.

In another bowl, sift flour, baking powder, and salt together. Stir a little of the flour mixture into the butter/sugar mixture.

Then add a little milk to the butter/sugar mixture and stir. Repeat, taking turns stirring in flour and milk little by little until everything is combined (about five turns).

Pour batter into an 8" x 13" baking pan that has been greased and floured. Bake 25 to 30 minutes.
Top with the jam of your choice. My favorite is strawberry but if you want to be more traditional then I would suggest you go with an apricot or perhaps a cherry. The last time i was in Kansas I had the opportunity to try this delicious cake.

In fact it was my first time and I have to say that I have been hooked ever since. Being vegetarian this cake seems to pair well with just about anything. I hope you enjoy it as much as I have.
