The Restaurant at The Legian

The Restaurant is the lone dining place at The Legian. Nestled between the lobby and the swimming pool, the ocean view from The Restaurant is absolutely gorgeous, especially at sunset. The restaurant's black interiors blend well with the lively blues of the swimming pool.

I went here for a food tasting session one Friday afternoon. Ms. Astrid Djuansjah, The Legian's Loyalty Program Manager, graciously joined us during the event. According to Ms. Djuansjah, The Legian has the privilege of having a new Executive Chef, Stephen Wright. Having worked in prestigious restaurants such as The Point in Melbourne, Circa Restaurant in Jakarta, and GHM's T8 Restaurant in Shanghai, he is indeed an excellent and innovative chef. Chef Stephen is fascinated by molecular gastronomy, a scientific approach to cooking wherein flavor combinations are based on how the brain interprets smell and taste. Though we didn't have an opportunity to talk to this extremely busy Executive Chef, we did get the chance to experience some of his creations.

For appetizer, we had Yellow Fin Tuna with Wasabi Mayo. , “Our Executive Chef specializes in Japanese-inspired French cuisine,” Ms. Djuansjah said. Slices of sesame-seed encrusted yellow fin tuna artfully sat on a bed of fresh green sprouts and wasabi-infused mayonnaise, which perked up my taste buds. Topped with rich caviar, I savored every single bite.

Chef Stephen had likewise prepared Suckling Pig Foie Gras , succulent pork cuts accompanied by medium-rare scallops and four different sauces, for our main course. I must say, the pork and scallops were so tender, these melted in my mouth!

Last but definitely not the least was dessert. We had the Apple and Carand Mille Feuille . Apple slices and cream were sandwiched in between delicate ginger bread crisps, along with a refreshing green apple sorbet. It's fusion cuisine at its best.
