The Knolls Tea Bar
Ambience wise was nothing to shout about having seated indoors. Lukewarm assorted breads were served together with its first of three course dinner, peach gazpacho. Cold and slightly sour soup which I thought could have prepared way advanced.
The main dish was a slow cooked chicken breast with asparagus risotto. While the risotto was undercooked, the flavor was somehow detached. In my opinion, a simple dish that could be done much better by most restaurants. Last of the dish, mediocre and very common dessert, Raspberry Tart with Red Fruit Sorbet. Off the shelf raspberry sorbet , and you guessed it, fresh raspberry. The pastry was so hard that I gave up trying after one attempt in breaking it down. Service wise was good if only you want a very quiet dinner, as our water was only refilled once after several attempts in finding the staff. The bill? At $48++ plus $20++ (is it me or is it only this restaurant that charges more than the usual $35++ plus $20++ for restaurant week). Totally not worthy for 3 below average dishes. Now I can also understand why is it so empty. I had not wanted to go through the hassle of creating an account and just be only reading and finding good places to eat. But after tonight's encounter, I felt deeply that I have the responsibility to at least inform and let the rest of the hgw community know what to expect.

The Place I have been in a frantic search for the Crispy Pork Buns of Tim Ho Wan ever since I first tried it in Hong Kong. To say that I am excited is a serious understatement as I could barely contain my excitement the moment I heard from my friends that Canton Paradise has replicated Tim Ho Wan’s Crispy Pork Buns. Research has shown that an estimate of four billion trees is being cut down yearly. It may not cross one’s mind often to think about how much paper is being taken for granted every day. Look around and we’ll see that our use for paper is everywhere and yet, it is not taken to heart that one day, we might run dry our natural resources.

Tai Hing Pte Ltd, is one such company that believes in preservation through recycling. It was founded in 1971 by Mr. Lim Kiat Lye and has since, worked towards creating awareness on the use of recycling of paper.

The term “recycle” is used loosely, but the process isn’t quite as simple. These used paper, after collection need to be separated into different grades, and shredded where they will be exported to paper mills for refining. Countries like India, Indonesia, Thailand, Malaysia, Philippines, Vietnam, Korea, Sri Lanka, Bangladesh and Pakistan are where Tai Hing exports the segregated paper, and the recycling procedure takes place.

“With resources depleting, this industry is an ongoing one”, explained Mr. Lim on his initial reason for setting up Tai Hing Pte Ltd. Together with that, and a deep passion for the environment, Mr. Lim who operated a small business previously, set forth on a vision to make a living out of passion.

Now, after years of hard work, he can take a back seat while all three of his children are working for him. Though Tai Hing has grown from only a few workers to a team of 38 people, and a 60,000 sq ft factory, he has kept his down-to-earth personality. Ms. JacQueline, echoing her siblings could not have greater admiration for her father.

“My father, coming from nothing understands the value of money. Till today, he only drinks 70 cents coffee!” shared JacQueline. She added about Mr. Lim, “growing up, he strived perseveringly for the family and has gained respect from people in the industry, but still retains his humility”.

Within the next few years, Mr. Lim will finally enjoy the fruits of labour through retirement and trusting the hands he has moulded in his children. “I believe the next generation can succeed the business to a greater level”, he concludes.
