When your family budget is stretched just about as far as it will go, you need some real tools to stretch it even further. One of the means we can use to squeeze a few more pennies out of your paycheck is to cut back at the grocery store. This is where our friend the black bean comes in.
If you find yourself wandering aimlessly through the aisles of your grocery store, looking for something to make for dinner that won't break your budget, take a detour over to the black bean display and check out the price. Considering that black beans are loaded with nutrients like protein, iron, calcium, and potassium, and they are high in fiber, and low in fat and sugar, they really offer a lot of bang for your buck. It's obvious that black beans should be a staple in every household, frugal or not. So, let's think up a few simple meals to create with your new best friend... the black bean.
1) Quick and Easy Beany Soup
You'll need 1 can each of black beans, garbanzo beans, butter beans, and navy beans (although you really can use any kinds of beans). In a large pot, pour 2 tablespoons olive oil, add 1 cup chopped celery and 1 cup chopped onion. Cook until celery is a little tender. Now add 1 clove garlic, minced or crushed and cook for just a minute. Open and drain, but do not rinse, all four bean cans and pour into pot. Add 1 small can diced tomatoes and 1 small can chicken broth. Simmer slowly for about 20 minutes. It's ready to eat.
2) Loads Of Beans Salad
Pick your favorite canned beans like, black beans, garbanzo beans, navy beans, butter beans, waxed beans, kidney beans, and any others that you may like to try. Drain and rinse them all very well. Put them in a nice big serving bowl. Add to the salad bowl some chopped onion, celery, chives, fresh parsley, rosemary if you like, thyme, or any other herb on hand. Season by sprinkling a good vinaigrette salad dressing all over and mixing in well. I prefer for this salad Paul Newman's Balsamic Vinaigrette; it's reasonably priced and good for a lot of recipes.
3) Simple Black Beans and Taco Sauce
My daughter loves black beans, and loves her taco sauce, too. So, the two just seemed a natural when she put them together in a bowl. Now the whole family is hooked! Just drain and rinse a can of black beans, make sure they're drained well, then pour into a bowl and mix in some of those leftover packets of taco sauce you have laying around the kitchen. It makes a quick and tasty side dish or snack. This easy treat is worth a try even if you're a bit skeptical. Once you're hooked, you may want to try using some hot salsa, but just a little to add flavor, not too much sauce. Don't forget to put some cheese on top!
4) Black Bean Celery Salad with Cottage Cheese
You can throw together a really fast and delicious salad in just a few minutes, with these simple ingredients. Take a salad bowl, add about a 1 cup scoop of cottage cheese, salt to taste, and add some freshly ground black pepper. Thoroughly drain and rinse some canned black beans. Add about 1/2 cup of the rinsed black beans to the top of the cottage cheese. For crunch, dice some celery and put a handful on top of the black beans. This salad is not only yummy, but it's got the nutrition you're looking for, like lots of protein, calcium, iron, potassium, and fiber.
5) Black Bean Burrito Harvest
With just a few items you keep on hand, you can always create a wonderfully classic burrito. Grab a corn or flour tortilla, heat it up if you like, and set it on a plate. Thoroughly drain and rinse a can of black beans. Now you can begin designing your burrito with whatever you have in the kitchen. Lay some black beans on your tortilla, add celery, tomatoes, shredded cheese, onion, leftover rice or even potatoes, diced chicken, sour cream, or any food you have to eat up. I usually prefer a little more black beans with just a few other items for flavor and texture. Just add taco sauce or salsa and dig in.
There are countless ways to enjoy our new friend, the black bean. You will easily be able to take the five ideas I've listed here and add your own personal flair to create black bean dishes to suit any taste, even your family's most finicky eater.
How To Make Black Beans
Black beans - nature's complete nutritious foods loaded with protein, cholesterol free, and they are noted as a quick delicious way to a healthy meal. In all bean recipes, we must always remember to drain and rinse the beans before using. Below I will give you some healthy recipe ideas for your healthy living with black beans.
Black Bean Saute
In a skillet treated with 1 tsp olive oil brown one small onion. Stir in one clove minced, and cook for a minute. Stir in one can 15 - 19 oz of drained and rinsed black beans. Remove from heat and stir in 2 tbsp chopped pickled jalapeno chilies. Healthy recipe makes about 1 3/4 cups and is excellent as a side dish with pork chops.
Black Bean Dip
In and food processor, puree one can beans, drained and rinsed, with 1 tbsp lime juice, 1 tsp freshly grated lime peel and 2 tsp chipotle pepper sauce. From the processor, remove mixture to a small bowl. Stir in 1/4 cup chopped fresh cilantro beans and 2 small Romano or plum tomatoes. Excellent healthy dip. Serve with cut up veggies.
Black Bean Salad
In medium bowl, mix one can beans, drained and rinsed, with 1 cup red pepper, chopped, 1/3 cup fresh cilantro leaves chopped, add one drained 15 1/4 oz corn niblets, and 2 tbsp of Ranch Dressing (calorie-wise).
Black bean salad is excellent side dish for pork chops.
Black Bean Soup
Place 1 cup of salsa into an oiled saucepan (virgin olive of course. Add a pinch of allspice and cook over medium heat for 3 minutes. Stir in 2 cans black beans, drained and rinsed, and 3 cups low sodium chicken broth. Heat to boiling point; reduce heat and simmer 10 minutes. Use blender or potato masher to mash beans rather coarsely.
This healthy recipe makes 6 cups of soup.
Black Bean Chili
In a large olive oiled pan, cook 8 oz lean ground beef and 1 small, chopped onion until beef is browned and onion is translucent which will take 10 minutes. Stir in 2 cans drained and rinsed black beans, one 14 1/2 oz can diced tomatoes with green chilies. Add 1 cup water. Heat to boiling over high heat; reduce to low and simmer 15 minutes, making certain to stir occasionally. Incredibly healthy recipe makes 5 cups of black bean chili.
Black Bean Brownies
Take one recipe of brownies, add 1 can of drained rinsed and mashed black beans. Cook brownies at recommended oven heat 350 degrees until healthy black bean brownies are baked. Cool and serve. Your friends will be amazed at just how tasty these brownies are.
Mango Black Bean Salad
1-15 oz can of black beans, drained and rinsed, add
2 cups diced mango, 1 cup diced sweet bell pepper, 6 green onions sliced thinly, 1/4 cup fresh cilantro leaves, 1/4 cup fresh lime juice, 1 tbsp olive oil,
1 jalapeno pepper with seeds removed and minced, and add sea salt and fresh pepper to taste.
In medium size salad bowl, mix black beans, diced mango, diced sweet red bell pepper, green onions sliced, freshly chopped cilantro leaves, lime juice, olive oil and jalapeno pepper together. Mix gently in salad bowl. Toss salad and serve. Healthy recipes serves 4 - 6 people. This is scrumptious and my favorite.
All of these recipes I have tried myself and truly enjoyed them. Black beans, you can see now, are totally usable and nutritious in many ways.
